Ingredients:

  • 4 large potatoes, russet or Yukon Gold
  • 1 1/2 cups cheese curds
  • 1 1/2 cups beef gravy
  • Salt to taste
  • Vegetable oil for frying

Directions:

  1. Peel the potatoes and cut them into even-sized matchsticks.
  2. Rinse the potatoes under cold water to remove excess starch.
  3. Heat vegetable oil in a deep fryer or large pot to 325°F (165°C).
  4. Fry the potatoes in batches until they are golden and crispy, about 5-6 minutes per batch.
  5. Remove the fries from the oil and drain them on paper towels. Season with salt.
  6. In a separate saucepan, heat the beef gravy until hot.
  7. To assemble the poutine, place a layer of fries on a serving plate, top with cheese curds, and pour hot gravy over the top.
