Ingredients:
- 4 cups sweet potatoes, peeled and cubed
- 1/2 cup brown sugar
- 1/4 cup unsalted butter, melted
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1 cup mini marshmallows
- 1/2 cup pecans, chopped
Directions:
- Preheat oven to 350°F (175°C).
- Boil sweet potatoes in a large pot for 15-20 minutes until tender. Drain and mash.
- In a mixing bowl, combine mashed sweet potatoes, brown sugar, melted butter, milk, vanilla, cinnamon, nutmeg, and salt. Mix until smooth.
- Spread the sweet potato mixture into a greased 9x13 inch baking dish.
- Top with mini marshmallows and chopped pecans.
- Bake in preheated oven for 25-30 minutes until marshmallows are golden brown.
