- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup milk
- 2 cups powdered sugar
- 1/2 cup shortening
- 1 teaspoon vanilla extract (for filling)
Directions:
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In a separate large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in 1 teaspoon vanilla extract.
- Gradually add the dry ingredients to the creamed mixture, alternating with milk, and mix until smooth.
- Drop rounded tablespoons of batter onto a baking sheet lined with parchment paper, leaving space between each.
- Bake for 10-12 minutes or until the tops spring back when lightly touched.
- Remove from the oven and let cool completely on a wire rack.
- In a medium bowl, beat together the powdered sugar, shortening, and 1 teaspoon vanilla extract until smooth to make the filling.
