Coconut Chocolate Oatmeal Balls

Ingredients:

  • 1 cup rolled oats
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup shredded coconut
  • 1/4 cup honey or maple syrup
  • 1/4 cup almond butter
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips

Directions:

  1. In a large mixing bowl, combine rolled oats, cocoa powder, shredded coconut, and salt.
  2. In a separate bowl, mix together honey (or maple syrup), almond butter, and vanilla extract until smooth.
  3. Pour the wet mixture into the dry ingredients and stir until thoroughly combined.
  4. Fold in the dark chocolate chips until evenly distributed.
  5. Chill the mixture in the refrigerator for about 30 minutes to firm up.
  6. Once chilled, scoop out tablespoon-sized portions and roll them into balls.
  7. Roll the balls in additional shredded coconut for coating if desired.
  8. Store in an airtight container in the refrigerator.
