Ingredients:

  • 1 cup all-purpose flour
  • 1 cup shredded coconut
  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • Edible black gel for eyes

Directions:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy, about 3 minutes.
  3. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In another bowl, whisk together flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the shredded coconut.
  7. Drop spoonfuls of batter onto the prepared baking sheet, shaping into ghost-like figures.
  8. Bake for 12-15 minutes, or until the edges are golden brown.
  9. Allow to cool slightly, then use edible black gel to draw eyes and mouths on the ghosts.
