Ingredients:
- 1 cup all-purpose flour
- 1 cup shredded coconut
- 1/2 cup butter, softened
- 1/2 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- Pinch of salt
- Edible black gel for eyes
Directions:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the butter and sugar until light and fluffy, about 3 minutes.
- Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- In another bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the shredded coconut.
- Drop spoonfuls of batter onto the prepared baking sheet, shaping into ghost-like figures.
- Bake for 12-15 minutes, or until the edges are golden brown.
- Allow to cool slightly, then use edible black gel to draw eyes and mouths on the ghosts.
