Ingredients:
- 1 lb conch meat, finely chopped
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1/2 cup diced bell peppers
- 1/4 cup diced onions
- 2 cloves garlic, minced
- 2 tsp baking powder
- 1/2 tsp cayenne pepper
- 1/2 tsp paprika
- 1/2 cup milk
- 2 eggs
- Salt and pepper to taste
- Oil for frying
- 1/2 cup mayonnaise
- Zest of 1 key lime
- 1 tbsp key lime juice
- 1/2 tsp garlic powder
- Salt and pepper to taste
Directions:
- In a large bowl, combine the conch meat, flour, cornmeal, bell peppers, onions, garlic, baking powder, cayenne pepper, paprika, milk, eggs, salt, and pepper. Mix well until combined.
- Heat oil in a deep fryer or large pot to 350°F (180°C).
- Drop spoonfuls of the conch mixture into the hot oil and fry until golden brown, about 3-4 minutes per batch. Make sure not to overcrowd the fryer.
- Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.
- In a small bowl, mix together mayonnaise, key lime zest, key lime juice, garlic powder, salt, and pepper to make the aioli.
- Serve the conch fritters hot with the key lime aioli for dipping.
