Conch Fritters with Key Lime Aioli

Ingredients:

  • 1 lb conch meat, finely chopped
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • 2 cloves garlic, minced
  • 2 tsp baking powder
  • 1/2 tsp cayenne pepper
  • 1/2 tsp paprika
  • 1/2 cup milk
  • 2 eggs
  • Salt and pepper to taste
  • Oil for frying
  • 1/2 cup mayonnaise
  • Zest of 1 key lime
  • 1 tbsp key lime juice
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Directions:

  1. In a large bowl, combine the conch meat, flour, cornmeal, bell peppers, onions, garlic, baking powder, cayenne pepper, paprika, milk, eggs, salt, and pepper. Mix well until combined.
  2. Heat oil in a deep fryer or large pot to 350°F (180°C).
  3. Drop spoonfuls of the conch mixture into the hot oil and fry until golden brown, about 3-4 minutes per batch. Make sure not to overcrowd the fryer.
  4. Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.
  5. In a small bowl, mix together mayonnaise, key lime zest, key lime juice, garlic powder, salt, and pepper to make the aioli.
  6. Serve the conch fritters hot with the key lime aioli for dipping.
