Ingredients:

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1/2 cup chocolate chips
  • 1/2 cup chopped pecans
  • 1/2 cup shredded coconut

Directions:

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In a separate large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in the rolled oats, chocolate chips, pecans, and shredded coconut.
  7. Drop tablespoonfuls of the dough onto a lined baking sheet, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are golden.
  9. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
