Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 cup unsalted butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups fresh or frozen cranberries, chopped
  • 1/4 cup orange juice
  • 1/2 teaspoon cinnamon
  • 1/2 cup brown sugar

Directions:

  1. Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a large mixing bowl, combine 2 cups flour, 1 cup granulated sugar, 1/2 teaspoon salt, and 1 teaspoon baking powder.
  3. Add 1/2 cup softened butter, 1 egg, and 1 teaspoon vanilla extract. Mix until crumbly.
  4. Press half of the mixture into the bottom of the prepared baking dish to form a crust. Bake for 10 minutes.
  5. While the crust is baking, prepare the cranberry filling by mixing 2 cups chopped cranberries, 1/4 cup orange juice, 1/2 teaspoon cinnamon, and 1/2 cup brown sugar in a bowl.
  6. Remove the crust from the oven and spread the cranberry mixture evenly over the crust.
  7. Crumble the remaining mixture on top of the cranberries.
  8. Return to the oven and bake for an additional 25-30 minutes, or until the top is golden brown.
  9. Allow to cool before slicing into bars.
