Cranberry Crumb Bars

Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 cup unsalted butter, softened
- 1 egg
- 1 teaspoon vanilla extract
- 2 cups fresh or frozen cranberries, chopped
- 1/4 cup orange juice
- 1/2 teaspoon cinnamon
- 1/2 cup brown sugar
Directions:
- Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish.
- In a large mixing bowl, combine 2 cups flour, 1 cup granulated sugar, 1/2 teaspoon salt, and 1 teaspoon baking powder.
- Add 1/2 cup softened butter, 1 egg, and 1 teaspoon vanilla extract. Mix until crumbly.
- Press half of the mixture into the bottom of the prepared baking dish to form a crust. Bake for 10 minutes.
- While the crust is baking, prepare the cranberry filling by mixing 2 cups chopped cranberries, 1/4 cup orange juice, 1/2 teaspoon cinnamon, and 1/2 cup brown sugar in a bowl.
- Remove the crust from the oven and spread the cranberry mixture evenly over the crust.
- Crumble the remaining mixture on top of the cranberries.
- Return to the oven and bake for an additional 25-30 minutes, or until the top is golden brown.
- Allow to cool before slicing into bars.
