Ingredients:
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 1/4 teaspoon salt
- 1 cup fresh cranberries, chopped
- 1 cup granulated sugar
- 2 large eggs
- 1/4 cup fresh lemon juice
- 1 teaspoon lemon zest
- 1/2 teaspoon baking powder
Directions:
- Preheat the oven to 350°F (175°C).
- In a medium bowl, mix flour, powdered sugar, and salt.
- Cut in the butter until the mixture resembles coarse crumbs.
- Press the mixture into the bottom of a greased 8x8 inch baking pan.
- Bake for 15 minutes until lightly golden.
- In another bowl, whisk together granulated sugar, eggs, lemon juice, lemon zest, and baking powder until smooth.
- Fold in chopped cranberries.
- Pour the cranberry mixture over the baked crust.
- Bake for an additional 20-25 minutes, or until set.
- Cool completely before cutting into bars.
