Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 1 cup fresh cranberries, chopped
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon baking powder

Directions:

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, mix flour, powdered sugar, and salt.
  3. Cut in the butter until the mixture resembles coarse crumbs.
  4. Press the mixture into the bottom of a greased 8x8 inch baking pan.
  5. Bake for 15 minutes until lightly golden.
  6. In another bowl, whisk together granulated sugar, eggs, lemon juice, lemon zest, and baking powder until smooth.
  7. Fold in chopped cranberries.
  8. Pour the cranberry mixture over the baked crust.
  9. Bake for an additional 20-25 minutes, or until set.
  10. Cool completely before cutting into bars.
