Serving Size: Serves 8

Ingredients:

  • 1 package of refrigerated pie crusts
  • 4 large Granny Smith apples, peeled, cored, and sliced
  • 1 cup fresh cranberries
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon almond extract
  • 1/2 cup sliced almonds
  • 1 egg, beaten (for egg wash)

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the sliced apples, cranberries, granulated sugar, brown sugar, flour, cinnamon, and almond extract. Mix well to coat the fruit evenly.
  3. Unroll one pie crust and place it in a pie dish. Spoon the apple-cranberry mixture into the crust.
  4. Sprinkle sliced almonds over the fruit filling.
  5. Top the pie with the second pie crust. Seal the edges and crimp as desired. Cut slits in the top crust for ventilation.
  6. Brush the top crust with beaten egg for a golden finish.
  7. Bake the pie in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
  8. Allow the pie to cool slightly before serving. Enjoy warm with a scoop of vanilla ice cream!
