Creamy Garlic Butter Mashed Potatoes

Ingredients:

  • 2 lbs Yukon Gold potatoes, peeled and quartered
  • 1/2 cup unsalted butter, softened
  • 1/2 cup heavy cream
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh chives for garnish

Directions:

  1. Place the potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes.
  2. While the potatoes are cooking, melt 2 tablespoons of butter in a small saucepan over medium heat. Add the minced garlic and cook until fragrant, about 1-2 minutes. Set aside.
  3. Drain the cooked potatoes and return them to the pot. Add the remaining butter and heavy cream. Mash the potatoes until smooth and creamy.
  4. Stir in the garlic butter mixture and season with salt and pepper to taste.
