Creamy Spinach Pasta Salad

Ingredients:

• 8 oz penne pasta
• 2 cups fresh spinach, chopped
• 1/2 cup cherry tomatoes, halved
• 1/4 cup red onion, finely chopped
• 1/3 cup feta cheese, crumbled
• 1/4 cup toasted pine nuts
• 1/4 cup extra-virgin olive oil
• 2 tbsp balsamic vinegar
• 1 clove garlic, minced
• Salt and pepper to taste

Directions:

1. Cook the penne pasta according to package instructions. Drain and rinse with cold water.
2. In a large mixing bowl, combine the cooked pasta, chopped spinach, cherry tomatoes, red onion, feta cheese, and pine nuts.
3. In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, salt, and pepper to make the dressing.
4. Pour the dressing over the pasta salad and toss gently to coat all the ingredients evenly.
5. Chill the salad in the refrigerator for at least 30 minutes before serving.
6. Garnish with additional feta cheese and pine nuts before serving, if desired.
