Ingredients:

  • 8 oz penne pasta
  • 2 cups fresh spinach, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/3 cup feta cheese, crumbled
  • 1/4 cup toasted pine nuts
  • 1/4 cup extra-virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 clove garlic, minced
  • Salt and pepper to taste

Directions:

  1. Cook the penne pasta according to package instructions. Drain and rinse with cold water.
  2. In a large mixing bowl, combine the cooked pasta, chopped spinach, cherry tomatoes, red onion, feta cheese, and pine nuts.
