Ingredients:

  • 1 cup stone-ground grits
  • 4 cups water
  • 1 pound large shrimp, peeled and deveined
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 2 tablespoons all-purpose flour
  • 2 tablespoons chopped fresh parsley

Directions:

  1. In a medium saucepan, bring water to a boil. Slowly whisk in the grits, reduce heat to low, cover, and simmer for about 20 minutes, stirring occasionally.
  2. In a bowl, season the shrimp with paprika, garlic powder, cayenne pepper, salt, and pepper.
  3. In a large skillet, melt butter over medium heat. Add the seasoned shrimp and cook until pink, about 2-3 minutes per side. Remove shrimp and set aside.
  4. In the same skillet, sauté bell peppers, onions, and garlic until softened, about 5 minutes.
  5. Sprinkle flour over the vegetables and stir to combine. Cook for another minute.
  6. Gradually add chicken broth, stirring constantly until the mixture thickens.
  7. Return the shrimp to the skillet and simmer for an additional 2-3 minutes.
  8. Serve the shrimp and vegetable mixture over the creamy grits. Garnish with chopped parsley.
