Crispy Black Bean Tostadas

Ingredients:

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 tostada shells
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, sliced

Directions:

  1. In a bowl, mash the black beans with cumin, chili powder, garlic powder, salt, and pepper.
  2. Spread the seasoned black beans evenly on each tostada shell.
  3. Top with shredded lettuce, diced tomatoes, and cheddar cheese.
  4. Bake in a preheated oven at 400°F (200°C) for 5-7 minutes, until the cheese is melted and the tostadas are crispy.
  5. Remove from the oven and garnish with chopped cilantro and sliced avocado.
  6. Serve hot and enjoy!
