Crispy Bluegill Pan-Fried Battered

Ingredients:

• 4 bluegill fillets
• 1 cup all-purpose flour
• 2 eggs
• 1/2 cup cornmeal
• 1 teaspoon garlic powder
• 1 teaspoon paprika
• Salt and pepper to taste
• Vegetable oil for frying

Directions:

1. In a shallow dish, mix together the flour, cornmeal, garlic powder, paprika, salt, and pepper.
2. In another dish, beat the eggs.
3. Dip each bluegill fillet into the egg mixture, then dredge in the flour mixture, ensuring it's coated evenly.
4. Heat vegetable oil in a skillet over medium heat.
5. Fry the battered bluegill fillets for 3-4 minutes on each side, or until golden brown and crispy.
6. Remove from the skillet and place on a paper towel-lined plate to drain excess oil.
7. Serve hot with lemon wedges and tartar sauce.
