Crispy Fried Squash

Ingredients:
- 2 medium yellow squash, sliced into 1/4 inch rounds
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 2 large eggs
- 1 cup breadcrumbs
- Vegetable oil for frying
Directions:
- In a shallow bowl, mix flour, salt, black pepper, and paprika.
- In another bowl, beat the eggs until well combined.
- Place breadcrumbs in a third shallow dish.
- Dredge each squash slice in the flour mixture, shaking off excess.
- Dip the floured squash into the beaten eggs, allowing excess to drip off.
- Coat the squash in breadcrumbs, pressing gently to adhere.
- Heat about 1/2 inch of vegetable oil in a large skillet over medium heat until shimmering.
- Fry the squash slices in batches for 2-3 minutes on each side until golden brown and crispy.
- Transfer fried squash to a paper towel-lined plate to drain excess oil.
- Serve warm as an appetizer or side dish.
