Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 eggs
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • Vegetable oil for frying

Directions:

  1. Place the chicken breasts between two sheets of plastic wrap and gently pound them to 1/4-inch thickness.
  2. In three separate shallow dishes, place the flour in one, beaten eggs in another, and combine breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper in the third.
  3. Dredge each chicken breast in the flour, then dip into the beaten eggs, and finally coat with the breadcrumb mixture, pressing gently to adhere.
  4. Heat vegetable oil in a large skillet over medium-high heat. Fry the breaded chicken breasts for about 4-5 minutes per side, or until golden brown and cooked through.
  5. Remove the schnitzels from the skillet and place them on a paper towel-lined plate to drain excess oil.
