Crispy Parmesan Zucchini Fritters

Ingredients:

  • 2 medium zucchinis, grated
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup olive oil

Directions:

  1. In a bowl, mix the grated zucchinis with salt and let sit for 10 minutes to release moisture.
  2. Squeeze out excess moisture from the zucchinis using a clean kitchen towel.
  3. In a separate bowl, combine the zucchinis, Parmesan cheese, breadcrumbs, egg, garlic, salt, and black pepper.
  4. Mix until well combined.
  5. Heat olive oil in a skillet over medium heat.
  6. Scoop about 2 tablespoons of the zucchini mixture and form into small fritters.
  7. Place the fritters in the skillet and flatten slightly with a spatula.
  8. Cook for 3-4 minutes per side or until crispy and golden brown.
  9. Remove from the skillet and place on a paper towel-lined plate to drain excess oil.
