Crispy Peking Duck with Hoisin Glaze

Ingredients:

  • 1 whole duck
  • 1/4 cup soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp honey
  • 1 tsp Chinese five-spice powder
  • 1/2 cup water
  • 1/4 cup rice vinegar
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • Salt and pepper to taste

Directions:

  1. Preheat the oven to 350°F (175°C).
  2. In a small bowl, mix together soy sauce, hoisin sauce, honey, Chinese five-spice powder, water, rice vinegar, garlic, and ginger to make the glaze.
  3. Season the duck with salt and pepper, then brush the glaze all over the duck, inside and out.
  4. Place the duck on a rack in a roasting pan and roast in the preheated oven for about 2 hours, basting with the glaze every 30 minutes.
  5. Increase the oven temperature to 425°F (220°C) and roast for an additional 30 minutes to crisp up the skin.
  6. Remove the duck from the oven and let it rest for 10 minutes before carving.
  7. Serve the crispy Peking duck with steamed pancakes, sliced cucumbers, and green onions.
