Crispy Peking Duck with Hoisin Glaze

Ingredients:
- 1 whole duck
- 1/4 cup soy sauce
- 2 tbsp hoisin sauce
- 1 tbsp honey
- 1 tsp Chinese five-spice powder
- 1/2 cup water
- 1/4 cup rice vinegar
- 2 cloves garlic, minced
- 1 inch ginger, grated
- Salt and pepper to taste
Directions:
- Preheat the oven to 350°F (175°C).
- In a small bowl, mix together soy sauce, hoisin sauce, honey, Chinese five-spice powder, water, rice vinegar, garlic, and ginger to make the glaze.
- Season the duck with salt and pepper, then brush the glaze all over the duck, inside and out.
- Place the duck on a rack in a roasting pan and roast in the preheated oven for about 2 hours, basting with the glaze every 30 minutes.
- Increase the oven temperature to 425°F (220°C) and roast for an additional 30 minutes to crisp up the skin.
- Remove the duck from the oven and let it rest for 10 minutes before carving.
- Serve the crispy Peking duck with steamed pancakes, sliced cucumbers, and green onions.
