Ingredients:

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup sour cream
  • 10 small corn tortillas
  • Oil for frying

Directions:

  1. In a skillet, cook the ground beef over medium heat until browned. Add the onion, bell pepper, and garlic, and cook until vegetables are softened.
  2. Stir in the diced tomatoes, chili powder, cumin, salt, and pepper. Simmer for 10 minutes.
  3. Heat oil in a separate skillet for frying.
  4. In another skillet, heat the tortillas one at a time until warm and pliable.
  5. Working quickly, carefully place a tortilla in the hot oil and fold it in half using tongs. Fry until golden and puffy, about 1-2 minutes per side. Repeat with remaining tortillas.
  6. Fill each taco shell with the beef mixture, cheese, lettuce, diced tomatoes, and a dollop of sour cream.
  7. Serve hot and enjoy the crispy puffy tacos!
