Crispy Roasted Duck with Orange Glaze

Ingredients:

  • 1 whole duck (about 5-6 lbs)
  • 2 oranges, sliced
  • 4 cloves of garlic, minced
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tbsp rice vinegar
  • 1 tsp Chinese five-spice powder
  • Salt and pepper to taste

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. Rinse the duck inside and out, then pat dry with paper towels.
  3. Season the duck generously with salt, pepper, and Chinese five-spice powder, both inside and outside.
  4. Stuff the duck cavity with orange slices and minced garlic.
  5. Place the duck on a roasting rack in a roasting pan, breast side up.
  6. Roast the duck in the preheated oven for about 2 hours, or until the skin is crispy and the internal temperature reaches 165°F (74°C).
  7. While the duck is roasting, make the glaze by combining soy sauce, honey, and rice vinegar in a small saucepan. Cook over low heat until slightly thickened.
  8. During the last 20 minutes of cooking, brush the duck with the orange glaze every 5 minutes.
  9. Once the duck is cooked, let it rest for 10-15 minutes before carving.
