Crunchy Peanut Butter Brownie Bites

Ingredients:

• 1 cup all-purpose flour
• 1/2 cup unsweetened cocoa powder
• 1/2 tsp baking powder
• 1/4 tsp salt
• 1/2 cup unsalted butter, melted
• 1 cup granulated sugar
• 2 large eggs
• 1 tsp vanilla extract
• 1/2 cup creamy peanut butter
• 1/2 cup chocolate chips
• 1/4 cup chopped peanuts

Directions:

1. Preheat the oven to 350°F (180°C) and line a mini muffin tin with paper liners.
2. In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.
3. In a separate bowl, mix together the melted butter and sugar until well combined.
4. Add the eggs and vanilla extract to the wet ingredients and mix until smooth.
5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
6. Fold in the peanut butter, chocolate chips, and chopped peanuts.
7. Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full.
8. Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean.
9. Let the brownie bites cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
