Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup buttermilk
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1/2 cup vegetable oil
  • Cream cheese frosting for topping

Directions:

  1. Preheat the oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a medium bowl, sift together the flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, cream the sugar and butter until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Mix in the buttermilk, red food coloring, vanilla extract, and vinegar.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until smooth.
  7. Stir in the vegetable oil until well combined.
  8. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  9. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow the cupcakes to cool completely before frosting with cream cheese frosting.
