Ingredients:

  • 4 large eggs
  • 1/4 cup diced bell peppers (red and green)
  • 1/4 cup diced onion
  • 1/4 cup diced cooked ham
  • 1/4 cup shredded cheddar cheese
  • 1 tablespoon butter
  • Salt to taste
  • Pepper to taste

Directions:

  1. In a bowl, whisk together the eggs, salt, and pepper until well combined.
  2. Heat a non-stick skillet over medium heat and add the butter.
  3. Once the butter is melted, add the diced onions and bell peppers, sautéing until they are soft, about 3-4 minutes.
  4. Add the diced ham to the skillet and cook for an additional 2 minutes.
  5. Pour the beaten eggs over the sautéed vegetables and ham, tilting the pan to distribute evenly.
  6. Cook for about 3-5 minutes, or until the edges start to set.
  7. Sprinkle the cheddar cheese on one half of the omelette.
  8. Carefully fold the omelette in half over the cheese and cook for another 1-2 minutes until the cheese is melted.
  9. Slide the omelette onto a plate and serve warm.
