Detox Lentil Vegetable Soup

Ingredients:

  • 1 cup dried green lentils
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 zucchini, diced
  • 1 can diced tomatoes
  • 2 cloves garlic, minced
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1/2 tsp coriander
  • Salt and pepper to taste
  • 2 tbsp olive oil

Directions:

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and garlic, and sauté until fragrant.
  3. Add the carrots, celery, and zucchini. Cook for 5 minutes.
  4. Stir in the lentils, diced tomatoes, vegetable broth, turmeric, cumin, coriander, salt, and pepper.
  5. Bring the soup to a boil, then reduce heat and simmer for 25-30 minutes, or until lentils are tender.
  6. Adjust seasoning if needed.
