These Deviled Potatoes are a delightful twist on the classic deviled eggs, featuring creamy, savory filling inside tender baked potato skins, perfect for any gathering.

Deviled Potatoes

Ingredients:

  • 12 small Yukon gold potatoes
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 green onions, finely chopped
  • 4 slices bacon, cooked and crumbled
  • Fresh parsley for garnish

Directions:

  1. Preheat the oven to 400°F (200°C).
  2. Wash the potatoes thoroughly and prick them several times with a fork.
  3. Place the potatoes on a baking sheet and bake for 25-30 minutes, or until tender.
  4. Once cooked, let the potatoes cool slightly, then cut them in half lengthwise.
  5. Scoop out the insides of the potatoes into a mixing bowl, leaving a small border to maintain the shape.
  6. Add mayonnaise, Dijon mustard, apple cider vinegar, smoked paprika, salt, and pepper to the bowl. Mix until smooth.
  7. Fold in the chopped green onions and crumbled bacon.
  8. Spoon the mixture back into the potato skins, mounding it slightly.
  9. Return the stuffed potatoes to the oven and bake for an additional 10 minutes.
  10. Garnish with fresh parsley before serving.
