Ingredients:
- 12 small Yukon gold potatoes
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- 1/4 teaspoon smoked paprika
- Salt and pepper to taste
- 2 green onions, finely chopped
- 4 slices bacon, cooked and crumbled
- Fresh parsley for garnish
Directions:
- Preheat the oven to 400°F (200°C).
- Wash the potatoes thoroughly and prick them several times with a fork.
- Place the potatoes on a baking sheet and bake for 25-30 minutes, or until tender.
- Once cooked, let the potatoes cool slightly, then cut them in half lengthwise.
- Scoop out the insides of the potatoes into a mixing bowl, leaving a small border to maintain the shape.
- Add mayonnaise, Dijon mustard, apple cider vinegar, smoked paprika, salt, and pepper to the bowl. Mix until smooth.
- Fold in the chopped green onions and crumbled bacon.
- Spoon the mixture back into the potato skins, mounding it slightly.
- Return the stuffed potatoes to the oven and bake for an additional 10 minutes.
- Garnish with fresh parsley before serving.
