Ingredients:

  • 1/4 cup chia seeds
  • 2 cups mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/2 avocado, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Directions:

  1. In a small bowl, mix chia seeds with 1/2 cup of water and let it sit for 10 minutes to form a gel-like consistency.
  2. In a large salad bowl, combine mixed greens, cherry tomatoes, red onion, avocado, and feta cheese.
