Ingredients:
- 8 small flour tortillas
- 500g minced lamb
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp paprika
- Salt and pepper to taste
- 1 cup Greek yogurt
- 1/2 cup tahini
- 1 cup diced cucumber
- 1 cup diced tomatoes
- 1/2 cup chopped fresh parsley
- 1 lemon, juiced
- Olive oil for drizzling
Directions:
- In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.
- Add minced lamb to the skillet, cooking until browned. Stir in cumin, coriander, paprika, salt, and pepper. Cook for an additional 5 minutes.
- In a bowl, mix Greek yogurt, tahini, and lemon juice. Set aside.
- Warm the flour tortillas in a dry skillet or microwave until pliable.
- Assemble each taco by placing a generous amount of the lamb mixture on a tortilla.
- Top with diced cucumber, tomatoes, and parsley.
- Drizzle with the yogurt-tahini sauce before folding the tortillas.
- Serve immediately, garnished with additional parsley if desired.
