Easy Chicken Parmesan

Serving Size: 4 servings

Ingredients:

  • 2 tablespoon olive oil
  • 4 boneless skinless chicken breast
  • 1 24 oz jar marinara sauce
  • 1 cup Italian style bread crumbs
  • 2 eggs, lightly beaten
  • 2 cups shredded mozzarella cheese

Directions:

  1. Preheat oven to 375
  2. In a large skillet heat olive oil until hot
  3. Meanwhile dip chicken into eggs and then coat with bread crumbs
  4. Cook chicken in skillet on each side for 3 minutes.
  5. Add 1/2 cup of the marinara sauce to the bottom of a 9x13 glass baking dish.
  6. Place chicken on top and pour the remainder marinara sauce over chicken.
  7. Top with mozzarella cheese and bake in the oven for 40 minutes or until the temperature of the chicken reaches 160 degrees.
  8. Serve on top of a bed of spaghetti noodles, or a side of mashed potatoes and green beans
