Edamame and Cheese Tamagoyaki

Ingredients:

  • 1 cup shelled edamame
  • 4 eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced green onions
  • Salt and pepper to taste
  • 1 tbsp vegetable oil

Directions:

  1. In a bowl, beat the eggs and mix in the shelled edamame, cheddar cheese, and green onions. Season with salt and pepper.
  2. Heat a non-stick pan over medium heat and add vegetable oil.
  3. Pour a thin layer of the egg mixture into the pan and cook until slightly set.
  4. Roll the cooked edges towards the center to create layers.
  5. Push the rolled layers to one side of the pan and pour in more of the egg mixture.
  6. Continue rolling and cooking until all the mixture is used up.
  7. Once cooked through, remove from the pan and slice into rounds.
