Egg and Green Onion Pirozhki Empanadas

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup warm water
  • 1/4 cup vegetable oil
  • 1 egg, beaten
  • 3 hard-boiled eggs, chopped
  • 1 cup chopped green onions
  • Salt and pepper to taste

Directions:

  1. In a mixing bowl, combine flour, warm water, and vegetable oil. Knead until a smooth dough forms. Let it rest for 30 minutes.
  2. Preheat the oven to 375°F (190°C).
  3. Divide the dough into small balls and roll each ball into a circle.
  4. Place a spoonful of chopped hard-boiled eggs and green onions on one side of each dough circle. Season with salt and pepper.
  5. Fold the dough over the filling to create a half-moon shape. Pinch the edges to seal the empanadas.
  6. Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with beaten egg.
