Ingredients:

  • 2 Tbsp Soy sauce
  • 12 oz firm Tofu. Diced
  • 8 cups Vegetable Broth
  • 4 large eggs
  • 1 cup chopped green onions, green part only
  • 4 cups Spinach

Directions:

  1. Bring the soy sauce, diced tofu, and broth to a boil.
  2. Whisk eggs in a bowl. Stir eggs into broth in a slow, steady stream while stirring the broth.
  3. Place chopped onions and spinach in bottom of bowls.
  4. Pour broth over spinach to serve.
