- 12 oz firm Tofu. Diced
- 8 cups Vegetable Broth
- 4 large eggs
- 1 cup chopped green onions, green part only
- 4 cups Spinach

- Whisk eggs in a bowl. Stir eggs into broth in a slow, steady stream while stirring the broth.
- Place chopped onions and spinach in bottom of bowls.
- Pour broth over spinach to serve.
