Ingredients:
- 4 ears of corn, husked
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 teaspoon chili powder
- 1/2 teaspoon cayenne pepper
- 1/4 cup crumbled cotija cheese
- 2 tablespoons fresh lime juice
- 1/4 cup chopped cilantro
- Salt to taste
Directions:
- Preheat grill to medium-high heat (about 400°F).
- Grill corn for 10-15 minutes, turning occasionally, until charred.
- In a bowl, mix mayonnaise, sour cream, chili powder, cayenne pepper, lime juice, and salt.
- Once corn is grilled, brush the mayo mixture generously over each ear.
- Sprinkle crumbled cotija cheese and chopped cilantro on top.
- Serve immediately with lime wedges on the side.
