Elote Preparado - Spicy Street Corn recipe - Mexican easy difficulty dish

Ingredients:

  • 4 ears of corn, husked
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 teaspoon chili powder
  • 1/2 teaspoon cayenne pepper
  • 1/4 cup crumbled cotija cheese
  • 2 tablespoons fresh lime juice
  • 1/4 cup chopped cilantro
  • Salt to taste

Directions:

  1. Preheat grill to medium-high heat (about 400°F).
  2. Grill corn for 10-15 minutes, turning occasionally, until charred.
  3. In a bowl, mix mayonnaise, sour cream, chili powder, cayenne pepper, lime juice, and salt.
  4. Once corn is grilled, brush the mayo mixture generously over each ear.
  5. Sprinkle crumbled cotija cheese and chopped cilantro on top.
  6. Serve immediately with lime wedges on the side.
