Ingredients:

  • 1 lb ground beef
  • 1 onion, finely chopped
  • 2 hard-boiled eggs, chopped
  • 1/2 cup green olives, pitted and sliced
  • 1/2 cup raisins
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 packs of pre-made empanada dough rounds (or homemade dough)
  • 1 egg, beaten (for egg wash)

Directions:

  1. In a skillet, cook the ground beef over medium heat until browned. Add the chopped onions and cook until softened.
  2. Stir in the chopped hard-boiled eggs, green olives, raisins, paprika, salt, and pepper. Cook for another 5 minutes. Remove from heat and let the filling cool.
  3. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  4. Place a spoonful of the beef filling in the center of each empanada dough round. Fold the dough over the filling to create a half-moon shape. Use a fork to crimp the edges and seal the empanadas.
  5. Brush the tops of the empanadas with the beaten egg to give them a golden color when baked.
  6. Bake the empanadas for about 20-25 minutes or until golden brown and crispy.
  7. Serve the empanadas hot with chimichurri sauce on the side.
