Ethiopian Spiced Chickpea Injera Tacos

Ingredients:

  • 1 cup chickpea flour
  • 1 cup water
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp turmeric
  • Salt to taste
  • 1/2 cup diced tomatoes
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • 1/2 cup shredded cabbage
  • 1/4 cup fresh cilantro
  • Lime wedges for serving
  • Sriracha sauce for topping

Directions:

  1. In a bowl, mix chickpea flour, water, cumin, paprika, turmeric, and salt to form a smooth batter.
  2. Heat a non-stick pan over medium heat and pour a ladle of the batter to make a thin pancake (injera). Cook for 2-3 minutes on each side until lightly browned. Repeat with the remaining batter.
  3. In a separate bowl, combine tomatoes, onions, bell peppers, cabbage, and cilantro to make a salsa.
  4. To assemble, place a spoonful of salsa on each injera, fold into a taco shape, and serve with lime wedges and sriracha sauce.
