Ingredients:
- 1 cup chickpea flour
- 1 cup water
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/4 tsp turmeric
- Salt to taste
- 1/2 cup diced tomatoes
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- 1/2 cup shredded cabbage
- 1/4 cup fresh cilantro
- Lime wedges for serving
- Sriracha sauce for topping
Directions:
- In a bowl, mix chickpea flour, water, cumin, paprika, turmeric, and salt to form a smooth batter.
- Heat a non-stick pan over medium heat and pour a ladle of the batter to make a thin pancake (injera). Cook for 2-3 minutes on each side until lightly browned. Repeat with the remaining batter.
- In a separate bowl, combine tomatoes, onions, bell peppers, cabbage, and cilantro to make a salsa.
- To assemble, place a spoonful of salsa on each injera, fold into a taco shape, and serve with lime wedges and sriracha sauce.
