Ingredients:

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can black beans, drained and rinsed
  • 1 can corn kernels, drained
  • 1 can diced tomatoes
  • 1 can green chilies
  • 1 packet taco seasoning
  • 12 corn tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • Sour cream, for serving
  • Fresh cilantro, chopped, for garnish

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Add the onion and garlic, sauté until fragrant.
  3. Stir in the black beans, corn, diced tomatoes, green chilies, and taco seasoning. Simmer for 5-7 minutes.
  4. In a greased baking dish, layer half of the meat mixture, followed by a layer of tortillas, and a layer of cheese. Repeat the layers, ending with a final layer of cheese on top.
  5. Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden brown.
  6. Serve the enchilada casserole hot, topped with sour cream and fresh cilantro.
