Ingredients:
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can black beans, drained and rinsed
- 1 can corn kernels, drained
- 1 can diced tomatoes
- 1 can green chilies
- 1 packet taco seasoning
- 12 corn tortillas
- 2 cups shredded cheese (cheddar or Mexican blend)
- Sour cream, for serving
- Fresh cilantro, chopped, for garnish
Directions:
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the ground beef over medium heat until browned. Add the onion and garlic, sauté until fragrant.
- Stir in the black beans, corn, diced tomatoes, green chilies, and taco seasoning. Simmer for 5-7 minutes.
- In a greased baking dish, layer half of the meat mixture, followed by a layer of tortillas, and a layer of cheese. Repeat the layers, ending with a final layer of cheese on top.
- Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden brown.
- Serve the enchilada casserole hot, topped with sour cream and fresh cilantro.
