Difficulty: EASY
Prep Time: 15 minutes
Cook Time: 15 minutes
Total Time: 30 minutes
Serving Size: 4 servings (about 8 pancakes)
Ingredients:
- 2 cups all-purpose flour
- 2 tbsp granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp fine salt
- 1 large egg
- 1 1/2 cups buttermilk
- 2 tbsp unsalted butter, melted and slightly cooled
- 1 tsp vanilla extract
- Neutral oil for greasing the skillet
Directions:
- Whisk the flour, sugar, baking powder, baking soda and salt together in a large bowl.
- In another bowl whisk the egg, buttermilk, melted butter and vanilla, then pour into the dry mixture and stir only until no dry pockets remain; a few lumps are fine.
- Rest the batter 5 minutes while a skillet or griddle heats over medium, then lightly oil it.
- Pour about 1/4 cup batter per pancake and cook 2-3 minutes, until bubbles cover the surface and the edges look set.
- Flip and cook 1-2 minutes more until golden and cooked through, lowering the heat if they brown too fast. Serve warm.
