Ingredients:

  • 2 large green tomatoes, sliced
  • 1 cup cornmeal
  • 1 cup buttermilk
  • 1 pound shrimp, peeled and deveined
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon hot sauce
  • 1 tablespoon lemon juice
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 hoagie rolls
  • Lettuce leaves for garnish
  • Sliced pickles for garnish

Directions:

  1. Preheat the air fryer to 375°F (190°C).
  2. Dip the green tomato slices in buttermilk, then coat with cornmeal.
  3. Place the coated tomato slices in the air fryer basket and cook for 10-12 minutes until crispy.
  4. In a bowl, combine mayonnaise, Dijon mustard, hot sauce, lemon juice, paprika, salt, and pepper to make the remoulade sauce.
  5. Season the shrimp with salt and pepper, then cook in the air fryer at 375°F (190°C) for 8-10 minutes until pink and cooked through.
  6. To assemble, spread the remoulade sauce on the hoagie rolls, layer with lettuce, fried green tomatoes, and shrimp.
  7. Top with sliced pickles and serve immediately.
