Frosted Sugar Cookie Bars

These soft and chewy sugar cookie bars are easy to make and perfect for sharing. With a simple vanilla frosting and your favorite sprinkles, they're a delicious treat for any occasion.

For The Bars
Ingredients:
- ½ cup salted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 tablespoons sour cream
- 1½ teaspoon vanilla extract
- 2⅓ cups all purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
Directions:
- Preheat oven to 375°F. Line an 11x7 baking pan with foil and grease with butter.
- Beat butter and sugar for until light and fluffy, about 2 minutes. Add egg, sour cream and vanilla and beat until thoroughly combined. The mixture might look slightly curdled, that's ok!
- In a separate bowl, combine flour, baking powder and salt. With your mixer on low, add flour to the butter mixture, mixing until just combined.
- Place the dough into the prepared pan and use your fingers to evenly press it into the pan.
- Bake for about 15 minutes, until the top appears dry and the edges are just starting to turn light brown. Make sure not to over bake! Cool the bars completely before frosting them.
For The Frosting
Ingredients:
- ½ cup salted butter, softened
- 1½ cups powdered sugar
- 2 tablespoons heavy whipping cream
- 1 teaspoon vanilla extract
Directions:
- Beat butter and powdered sugar for several minutes until light and fluffy.
- Add heavy whipping cream and vanilla and beat for several more minutes.
- Use an offset spatula or butter knife to spread the frosting over the cooled bars.
- Top with sprinkles and slice into squares. Enjoy!
