Ingredients:

  • 4 eggs
  • 1 cup matzah meal
  • 1/4 cup vegetable oil
  • 1/4 cup seltzer water
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8 cups chicken broth
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • Fresh dill for garnish

Directions:

  1. In a mixing bowl, beat the eggs.
  2. Add matzah meal, vegetable oil, seltzer water, salt, and black pepper. Mix until well combined.
  3. Cover the bowl and refrigerate the mixture for 30 minutes.
  4. In a large pot, bring chicken broth to a boil.
  5. Shape the matzah mixture into balls and carefully drop them into the boiling broth.
  6. Reduce heat, cover, and simmer for 30 minutes.
  7. Add carrots and celery to the pot and continue simmering for an additional 15 minutes.
  8. Serve the soup hot, garnished with fresh dill.
