Ingredients:

  • 1 pound fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 2 shallots, thinly sliced
  • 1 lemon, zested and juiced
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Directions:

  1. Bring a large pot of salted water to a boil.
  2. Add the green beans and blanch for 3-4 minutes until bright green and tender-crisp.
  3. Drain the green beans and immediately transfer them to an ice bath to stop the cooking process.
  4. In a large skillet, heat the olive oil over medium heat.
  5. Add the sliced shallots and sauté for 3-4 minutes until they are soft and translucent.
  6. Add the blanched green beans to the skillet, along with the lemon zest, lemon juice, salt, pepper, and red pepper flakes if using.
  7. Sauté for an additional 2-3 minutes until everything is heated through.
  8. Remove from heat, garnish with fresh parsley, and serve warm.
