Ingredients:
- 2 bison steaks (6 ounces each, about 1-inch thick)
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 cloves garlic, minced
- 2 tablespoons unsalted butter, softened
- 1 teaspoon fresh rosemary, finely chopped
- 1 teaspoon fresh thyme, finely chopped
- 1 teaspoon lemon juice
Directions:
- Preheat grill to medium-high heat (about 450°F).
- Pat bison steaks dry with paper towels and brush both sides with olive oil.
- Season steaks evenly with kosher salt and black pepper.
- Place steaks on the grill and cook for about 4-5 minutes per side for medium-rare, turning once. Use a meat thermometer to check for an internal temperature of 130°F.
- While steaks are grilling, combine softened butter, minced garlic, rosemary, thyme, and lemon juice in a small bowl. Mix well.
- Remove steaks from grill and let rest on a plate for 5 minutes.
- Top each steak with a dollop of rosemary garlic butter while still warm so it melts over the meat.
