Grilled Chicken Spinach Veggie Skewers

Ingredients:

• 1 lb chicken breast, cut into cubes
• 2 cups fresh spinach leaves
• 1 red bell pepper, diced
• 1 yellow bell pepper, diced
• 1 zucchini, sliced
• 1 red onion, cut into chunks
• 2 tbsp olive oil
• 2 cloves garlic, minced
• 1 tsp paprika
• 1 tsp cumin
• Salt and pepper to taste

Directions:

1. In a bowl, combine olive oil, minced garlic, paprika, cumin, salt, and pepper. Mix well.
2. Add chicken cubes to the marinade and coat evenly. Let it marinate for at least 30 minutes.
3. Preheat the grill to medium-high heat.
4. Thread marinated chicken, spinach leaves, bell peppers, zucchini, and onion onto skewers.
