These Grilled Hawaiian Huli Huli Skewers are a tropical delight with juicy chicken, sweet pineapple, and colorful veggies, all coated in a flavorful marinade. Perfect for a summer barbecue or luau party!

Grilled Hawaiian Huli Huli Skewers

Ingredients:

  • 1 lb chicken breast, cut into chunks
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 large red onion, cut into chunks
  • 1 cup pineapple chunks
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 1/4 cup ketchup
  • 2 cloves garlic, minced
  • 1 teaspoon ginger powder
  • Salt and pepper to taste
  • Wooden skewers, soaked in water

Directions:

  1. In a bowl, mix soy sauce, honey, ketchup, garlic, ginger powder, salt, and pepper to make the marinade.
  2. Place chicken pieces in the marinade, cover, and refrigerate for at least 1 hour.
  3. Preheat the grill to medium-high heat.
  4. Thread marinated chicken, bell peppers, onion, and pineapple onto the soaked skewers.
  5. Grill the skewers for about 10-12 minutes, turning occasionally and basting with the remaining marinade.
  6. Cook until chicken is cooked through and veggies are tender with a slight char.
