Grilled Peach and Burrata Salad

A refreshing summer salad with sweet grilled peaches, creamy burrata, and peppery arugula, finished with toasted pine nuts and a balsamic drizzle for a perfect balance of flavors.

Ingredients:
- 4 ripe peaches, halved and pitted
- 8 ounces burrata cheese
- 4 cups arugula
- 1/4 cup toasted pine nuts
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic glaze
- 1 teaspoon honey
- Salt to taste
- Freshly ground black pepper to taste
- Fresh basil leaves for garnish
Directions:
- Preheat grill to medium-high heat (about 400°F).
- Brush peach halves with 1 tablespoon olive oil.
- Grill peaches cut side down for 3-4 minutes until grill marks appear and peaches soften slightly.
- Remove peaches and let cool slightly, then slice each half into 3 wedges.
- In a large bowl, toss arugula with remaining 1 tablespoon olive oil, honey, salt, and pepper.
- Arrange dressed arugula on a serving platter.
- Place grilled peach wedges on top of arugula.
- Tear burrata into pieces and scatter over peaches and greens.
- Sprinkle toasted pine nuts over the salad.
- Drizzle balsamic glaze over the entire salad.
- Garnish with fresh basil leaves and serve immediately.
