Grilled Pesto & Mozzarella Cheese Sandwich

Ingredients:

  • 8 slices Sourdough
  • 4 tablespoons Pesto
  • 4 tablespoons Salted Butter, {softened}
  • 8 ounce ball of fresh Mozzarella, sliced thin

Directions:

  1. Preheat your pan over medium low heat.
  2. Spread evenly and thinly about a tablespoon of butter per (2) slice of bread.
  3. Lay the bread {butter-side down} on to the preheated pan. Layer Mozzarella and a tablespoon of pesto.
  4. Top with the second slice of bread {butter-side} up. Flip when nice and golden and repeat.
