  • 4 tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 1 cup whole milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp nutmeg
  • 4 large eggs, separated
  • 1 1/2 cups grated Gruyère cheese

Directions:

  1. Preheat the oven to 375°F (190°C). Grease a soufflé dish with butter and coat with grated Gruyère cheese.
  2. In a saucepan, melt the butter over medium heat. Add the flour and whisk constantly for 2 minutes to make a roux.
