Ingredients:

  • 2 cups diced ham leftovers
  • 2 medium potatoes, peeled and thinly sliced
  • 1 small onion, chopped
  • 6 eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 2 tbsp olive oil

Directions:

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat.
  3. Add onions and potatoes, season with salt and pepper, and cook until potatoes are tender, about 8-10 minutes.
  4. In a bowl, whisk together eggs and milk. Stir in diced ham and half of the shredded cheese.
  5. Pour the egg mixture over the cooked potatoes and onions in the skillet.
