Ingredients:

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 sweet potato, diced
  • 1 zucchini, sliced
  • 1 red bell pepper, chopped
  • 1 cup cherry tomatoes
  • 1/2 red onion, thinly sliced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped

Directions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the sweet potato, zucchini, red bell pepper, cherry tomatoes, and red onion with olive oil, salt, and pepper.
