Ingredients:
- 3/4 cup sugar
- 2 Tbsp butter, softened
- 2 Tbsp light corn syrup
- 1 egg
- 3/4 cup milk
- 1 cup flour
- 1 cup wheat bran
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 cup blueberries
Directions:
- Preheat oven to 350 degrees
- In the bowl of a stand mixer using the paddle attachment combine the sugar, butter, corn syrup, egg and the milk mix on medium speed till combined.
- In a medium bowl combine the flour, wheat bran, baking powder and baking soda, add flour mixture to the wet ingredients.
- In a small bowl stir in 1 Tbsp of flour to the blueberries. Fold in blueberries to the mixture.
- Fill paper lined muffin tins 3/4 of the way full.
- Bake for 25-30 minutes or until a toothpick when inserted comes out clean.
